The soup I made starting with homemade stock (I keep chicken bones in the freezer and make stock usually once a week), Brown 1lb bulk Italian sausage and remove from pan to drain. In large stock pot cook 1 diced onion and 2-3 diced garlic cloves. Add 3 large potatoes sliced thinly (like potato chips). Add stock and sausage and simmer until potatoes are soft. Add 1 small bunch of kale, thinly sliced. Cook until kale is soft.
